A typical weeknight at Bomba Downstairs is a plethora of packed suits, hanging out for a drink and some good food on the side.
You can start with the swordfish sashimi, draped throughout droplets of squid ink, radish and pickled cucumbers. It is a fresh and delicate start to the meal. Next, you may move to bone marrow toast with wagyu cecina. Generous chunks of bone marrow and a paper-thin slice of cured meat atop a thin slice of well-toasted bread, are to die for. The sides of freekeh salad and patatas bravas are okay.
The service at Bomba is excellent with attentive and knowledgeable waitresses. Even better is the warm and vibrant atmosphere – it definitely feels like everyone in there is having a great time. It’s recently had a rooftop bar added, but the ground floor is far from entry level quality.
The $49 taste menu is a great way to sample a wide range of dishes. Nine plates across three savory courses of three tastes each means more than enough food. This includes natural oysters, a tart gazpacho, crunchy croquettes, charcuterie, cheese-topped corn, grilled Moreton bay bugs, a wonderful farro & cauliflower salad and a slow cooked beef cheek. There are a number of desserts including a mixed cheese plate and a turron (nougat) parfait. Don’t miss to read the highlights one of the Best Spanish Restaurants Melbourne, Bomba Downstairs below:
